Benefits of potatoes

Did you know that potatoes can flood the market? Local potatoes forms bulk of the staple foods in Kenya and a must have in almost every meal for the Kikuyu Nation.
I being a *waru* lover…Kikuyu name for potatoes I can’t help but serve all the potatoes when I can. I like to mash them, have them in beef sometimes, roast them when having a cheat meal day I make fries, more when in the mood I whip up bajias even my love for chips masala can’t be left behind. When I visit home mukimo also known as kienyeji is a must have in my mums house.
I especially like when warming in in a pan with onions the taste is heavenly and the crisps it forms on the sides of the pan???? my siblings and I fight for them. Recently I attempted the  Creamy Potato Soup and it was an out of world experience check it out on the website.

So if potatoes crowd our world this much what are the benefits that we get from them?

Let’s take a look at it’s nutrition profile before we get to the benefits.
We all know they are carbohydrates, starch as some call it.

Carbohydrates are energy giving foods. They break down to give energy so our bodies can function properly. Unfortunately when we have enough energy they can be stored in the body to give energy at some later time.

Finally with the nutrients clearly stated lets learn about the benefits of including potatoes in our daily meals. Some may surprise you but most of them are just common knowledge. The best thing about being aware of what you eat is the choosing, you are totally in-charge of what you eat and know exactly what you get out of the meal.
so my dear potato lovers this is exactly what you have been benefiting from indulging in the potatoes. Just ensure you use clean methods of preparing the meal. Keep in mind that French Fries and baked potatoes are not equal. one is a very healthy option for an everyday meal while the other is good for a cheat meal.

Ever had those lazy days and it’s chilly outside wondering if it’s OK to just get some junk food delivered to your doorstep? I get those days alot too often, and trying to eat clean ain’t easy. With the number of fast food outlets offering free delivery the deal is just too sweet to let it slide.

Well today was one of those days I have not seen the sun. I walk into the kitchen and see these potatoes I bought at a great price and they can’t seem to get depleted despite having mash potatoes, boiled potatoes, stewed with beans, beef, I just can’t finish them. Well today is the day…

I must make something with all of them. My fridge has cream and some milk, I have some bunch of assorted veges… It’s a wrap Creamy potato soup it is.
I made other items with the potatoes more posts coming up.
It sounds weird especially since we know of pumpkin soup, butternut, carrot and rarely do we have potatoe soup, fasten your seat belts for a very yummy yummy ride.

Assemble your ingredients and let’s get cooking.
Let’s first of all peel the potatoes, dice into cubes and put in cold water and bring to boil, once boiled cover and let it simmer for about 30mins under low heat or just until it’s completely cooked. Hopefully you have some chicken stock for chicken flavour or vegetable stock for vegetarians. As for me I used chicken stock. There is a difference between chicken stock and chicken broth. The stock is just boiling chicken in water to make tender before cooking or its bones with bouquet garni and mirepoix. The Utalii in me but let me explain, mirepoix is vegetables cut into large cubes for flavour mostly onions, carrots and celery while bouquet garni is a bunch of fresh herbs and aromatics tied together in a bunch so they can add flavour to your stock and also easy to remove. I will write more on making different types of stocks. A broth on the other hand is a pimped up version of a stock but yummy to consume. Something like a clear chicken soup?. You are already learning more high five ✋.
Great now our potatoes are almost complete cooked throw in the diced carrots this are for the nutrients and colour, potatoes tend to be pale white. We put our stock in the cooker to warm up, and on the side have another cooking pan. Put butter and onions in and cook till they are golden brown. Drain the potatoes water and mash them. Transfer the mashed potatoes and carrots in the cooking pan with the onions, add the cream or milk or both and stir in to get the flavour. Here go with your taste I like black pepper, some salt.
Now it’s the easy part, that blender has been sitting there for weeks pull it out. I hope it’s working. Put the chunky soup in there and let’s smoothen it out. Blend in small portions you can add hot milk or some hot water to get it in the consistency you like.
The croutons well it was an easy shortcut. Those few slices that remained from breakfast. Apply butter on a few. Cut them in slices and toast them on the pan, if you have a toaster the better. Viola I now present you the yummy yummy out of this world *Creamy Potato soup*.
